The Danish Meat Research Institute (DMRI) in Roskilde carries out research and development for the Danish pork, beef and poultry industries and provides advisory services for the international meat industry on a commercial basis. The Institute was founded in 1954 and forms part of the Danish Meat Association (DMA). The Danish Meat Association was founded April 1st, 2006 by merging the three major meat organisations Danish Bacon & Meat Council (Danske Slagterier), the Danish Livestock and Meat Board (Kødbranchens Fællesråd) and the Danish Poultry Council (Det Danske Fjerkræraad).
DMRI works mainly in the areas of food safety, product quality, and environmental protection and production efficiency. Department of Process Technology and Hygiene has a well-equipped microbiological laboratory, including equipment necessary for PCR, RAPD and PFGE testing. DMRI has for a number of years been working with reduction/survival/growth of pathogenic bacteria in fresh meat and meat products, among others using pilot plant facilities to test the effect of different processes on the reduction of pathogenic bacteria in heat treated and not heat treated meat products.
